Description

Transform your Thanksgiving leftovers into a mouth-watering turkey sandwich with a balance of flavors and textures.

Ingredients

Scale
  • 2 slices of your favorite bread (whole grain, sourdough, or rye)
  • 6–8 ounces of leftover turkey, sliced or shredded
  • 2 tablespoons mayonnaise (or Greek yogurt)
  • 1 tablespoon Dijon mustard (or honey mustard)
  • Leafy greens (like spinach, arugula, or romaine)
  • Slices of tomato (fresh or roasted)
  • Pickles or sliced cucumbers for crunch
  • Optional toppings: avocado slices, turkey bacon, cheese (like Swiss or cheddar), cranberries
  • Salt and pepper to taste

Instructions

  1. Begin by toasting your slices of bread for texture and to prevent sogginess.
  2. Mix together the mayonnaise and Dijon mustard in a small bowl.
  3. Spread the mayo-mustard mix on one slice of bread, then layer on the turkey.
  4. Add your leafy greens, followed by tomato slices and any additional toppings.
  5. Season with salt and pepper to taste.
  6. Place the other slice of bread on top, press gently, and slice if desired.

Notes

Customize your sandwich with gluten-free bread, hummus for a vegan option, or add any toppings you enjoy.
