- 2 cups leftover mashed potatoes
- 1/2 cup grated cheese (cheddar, mozzarella, or your favorite)
- 1/4 cup all-purpose flour (or a gluten-free substitute)
- 1 large egg
- 1/4 cup green onions, finely chopped (or chives)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil or butter for frying
Instructions
- Start by taking those leftover mashed potatoes out of the fridge. If they’re a bit stiff, warming them slightly in the microwave can make mixing easier. Transfer the mashed potatoes to a mixing bowl.
- Add the grated cheese, flour, egg, green onions, garlic powder, salt, and pepper to the bowl. Mix everything together until combined; you want a nice, thick consistency that holds together.
- Once mixed, take a small handful of the potato mixture and form it into a patty (about the size of your palm). Repeat until you form patties with the remaining potato mixture, aiming for about 8 cakes.
- In a large skillet, heat a tablespoon of olive oil or butter over medium heat. Once hot, gently place a few patties into the skillet, being careful not to overcrowd the pan.
- Cook for about 4 to 5 minutes on each side, until they’re golden brown and crispy. Adjust the heat if necessary to prevent burning. Once done, transfer them to a plate lined with paper towels to absorb excess oil.
- Continue this process until all patties are cooked, adding more oil or butter between batches if needed.
- Serve hot and enjoy your delicious homemade leftover mashed potato cakes with your favorite dipping sauce or as part of a meal!

Feel free to customize the cakes with additional ingredients like cooked bacon alternatives or different spices. For healthier alternatives, consider using almond flour and nutritional yeast.
