Instructions
- Start by rinsing your fresh raspberries gently under cold water. If using frozen raspberries, ensure they’ve thawed completely. Next, blend the raspberries in a food processor until smooth.
- In a medium-sized saucepan over medium heat, whisk together the milk and sugar until well combined. Stir in the cornstarch mixed with a tablespoon of cold water to avoid clumps.
- Keep stirring until the mixture thickens, which should take about 5 minutes.
- Once the pudding has reached the desired consistency, remove it from the heat. Stir in the raspberry puree, vanilla extract, and a pinch of salt.
- Pour the pudding into individual serving dishes or a large bowl. Allow it to cool to room temperature then chill in the refrigerator for at least 2 hours.
- When ready to serve, garnish with fresh raspberries and mint leaves.
