A deliciously moist banana bread recipe perfect for using up overripe bananas.

- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/2 cup chocolate chips
- Optional: 1 teaspoon cinnamon
- Optional: 1 spoonful of peanut butter or Nutella
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 4×8 inch loaf pan or line it with parchment paper.
- Mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until fully incorporated.
- Mix in the baking soda and salt.
- Add sugar, beaten egg, and vanilla extract; mix well.
- Fold in the flour gently without overmixing.
- If using, fold in the nuts or chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack.
Notes
For a lighter version, substitute unsweetened applesauce for half the butter and use whole wheat flour.
