Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (optional)
  • 2 tablespoons vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Start by marinating the chicken. In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, apple cider vinegar, and sesame oil. Place your chicken in a large ziplock bag or a shallow dish and pour the marinade over it. Seal the bag and let it marinate in the refrigerator for at least 15 minutes.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (don’t discard the marinade) and season both sides with salt and pepper. Once the skillet is hot, add the chicken. Cook each side for about 5-7 minutes until it’s browned and cooked through.
  3. Once the chicken is cooked, pour the reserved marinade into the skillet. Bring it to a simmer over medium heat, stirring occasionally for about 5 minutes until thickened.
  4. After the sauce is ready, slice the chicken and return it to the skillet to coat with the sauce, letting it simmer for an additional minute.

Notes

Marinate the chicken longer for better flavor. Serve over jasmine rice or quinoa.
