Ingredients

  • 2 cups of cooked rice (white or brown)
  • 1 pound of boneless, skinless chicken thighs
  • 1 cup of BBQ sauce
  • 1/4 cup of honey
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of diced bell peppers (red or green)
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Prepare your rice according to package instructions. If using leftover rice, warm it up.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add garlic and cook for another 1-2 minutes until fragrant.
  4. Include chicken thighs, season with salt, pepper, and paprika. Cook until browned, around 6-7 minutes on each side.
  5. Pour in BBQ sauce and honey, stirring well to coat the chicken. Let simmer for about 5 minutes.
  6. Combine cooked rice with the chicken mixture in the skillet and heat through for an additional 3-5 minutes.
  7. Serve hot, garnished with fresh parsley or sliced green onions.

Notes

For a vegetarian option, replace chicken with firm tofu. You can also use cauliflower rice for a lower-carb alternative.
