Instructions
- Begin by hard-boiling your eggs. Place them in a pot and cover them with cold water. Bring the pot to a rolling boil, then turn off the heat and cover it. Let the eggs sit for about 12 minutes before transferring them to an ice bath to cool.
- Once the eggs are cool, gently crack the shells and peel them under running water or in a bowl of water to make the process easier. Then, cut the eggs in half lengthwise and remove the yolks, placing them in a mixing bowl.
- Mash the yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the yolks. Mix everything until it reaches a creamy, spreadable consistency.
- Using a piping bag (or a simple ziplock bag with the corner cut off), carefully fill the egg whites with your yolk mixture.
- Finally, sprinkle with paprika and optional chopped chives or parsley for an aesthetic touch. Serve chilled to enjoy these delightful bites!
