  • 1 tablespoon butter (or ghee for dairy-free)
  • ¼ cup mayonnaise (or Greek yogurt for lighter option)
  • ¼ cup crumbled feta cheese (or cotija)
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (optional for garnish)
  • 2 cups cooked quinoa or brown rice (or cauliflower rice)
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  1. Start by marinating the chicken. In a bowl, combine olive oil, chili powder, paprika, garlic powder, salt, and pepper. Add the chicken thighs and coat them well. Let them sit for about 10-15 minutes.
  2. While the chicken is marinating, heat a skillet over medium heat. Add 1 tablespoon of butter and melt. Toss in the corn kernels and sauté for 8-10 minutes.
  3. Once the corn is ready, mix in the mayonnaise (or yogurt), lime juice, and feta. Stir until well coated.
  4. In another skillet or on the grill, cook the marinated chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  5. While the chicken is cooking, prepare your base by cooking quinoa or brown rice according to package instructions.
  6. Once everything is cooked, assemble the bowls with quinoa or rice, topped with sliced chicken, street corn mixture, avocado, and a squeeze of lime.

Notes

Feel free to substitute chicken with black beans or grilled tofu for a vegetarian option. Various toppings like chopped jalapeños or different cheese varieties can enhance the dish.
