Ingredients

- 1.5 to 2 pounds Chicken (breasts or thighs)
- 3 tablespoons Dijon mustard
- 2 tablespoons Fresh rosemary (or dried)
- 2 cloves Garlic (minced)
- 1 Lemon (juice and zest)
- 2 tablespoons Olive oil
- Black pepper to taste
- Salt (optional)
- Optional add-ins: Honey, paprika, red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the marinade in a bowl: Dijon, olive oil, lemon juice, rosemary, garlic, pepper, and a little salt if desired.
- Coat the chicken well with the marinade and let it sit while the oven heats.
- Place chicken in a baking dish and pour any extra marinade over the top.
- Bake until the chicken is cooked through, about 18 to 25 minutes for breasts (longer for thighs).
- Let it rest for 5 minutes before slicing.
- Broil for 1 to 2 minutes for extra color, if desired.
Notes
Pat the chicken dry before adding marinade for better adhesion. Store leftovers in an airtight container in the fridge for up to 3-4 days.
