Description

Wholesome and nutritious oatmeal crepes that are easy to make and perfect for breakfast.


Ingredients

  • 1 cup rolled oats (gluten-free if needed)
  • 1½ cups milk of choice (almond, cow’s, oat, etc.)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • Optional: 1 tablespoon sweetener (honey, maple syrup, or agave)
  • Optional: 1 tablespoon chia seeds or ground flaxseed

Instructions

  1. Start by blending the rolled oats in a blender until they reach a fine flour consistency.
  2. Add the milk, eggs, vanilla extract, cinnamon, salt, and any optional ingredients you desire. Blend again until everything is well combined into a smooth batter.
  3. Allow the batter to rest for about 10 minutes.
  4. Heat a non-stick skillet over medium heat.
  5. Pour about ¼ cup of batter onto the center of the pan. Quickly swirl the pan around to coat the base evenly.
  6. Carefully flip the crepe using a spatula and cook the other side for an additional minute or until golden brown.

Notes

Feel free to experiment with substitutions based on dietary needs. Refrigerate any leftover crepes for up to 3 days or freeze for up to a month.
