- 1 pound ground beef (or turkey for a leaner option)
- 4 medium-sized potatoes, thinly sliced
- 1 cup diced onions
- 2 cups shredded low-fat cheese (cheddar or a blend)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or fresh)
- 2 cups diced bell peppers (any color)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the diced onions and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
- Toss in the ground beef, breaking it apart. Season with cumin, paprika, salt, and pepper. Brown the beef until fully cooked, about 5-7 minutes.
- Stir in black beans, corn, and bell peppers, mixing well. Let it simmer for 5 minutes.
- Layer half of the potato slices in a greased baking dish. Spread half of the beef mixture over the potatoes and sprinkle half of the cheese on top. Repeat the layers.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes.
- Let it rest for 5 minutes, then garnish with fresh parsley if desired.
Notes
Feel free to customize the veggie mix and use sweet potatoes or plant-based proteins as alternatives.
