Ingredients

  • 2 cups spinach or kale, chopped
  • 1 medium bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup feta cheese, crumbled (optional)
  • 1 avocado, sliced (optional)
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • Chili flakes, optional, for added heat
  • Fresh herbs (such as parsley or cilantro), for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Once heated, add the diced onion and bell pepper, sautéing until they soften and turn fragrant—about 3-4 minutes.
  2. Add minced garlic next, stirring for another minute.
  3. Stir in the ground turkey, breaking it apart with a spatula. Let it cook, stirring occasionally, until browned and cooked through—approximately 5-7 minutes. Season with salt, pepper, paprika, and chili flakes if you like a kick.
  4. Once the turkey is cooked, mix in the chopped spinach or kale and allow it to wilt—around 2-3 minutes.
  5. In a separate pan, scramble the eggs by whisking them with a pinch of salt and pepper before cooking in a preheated non-stick skillet.
  6. Assemble your breakfast bowl starting with the turkey and veggie mix as a base, top with scrambled eggs, and finish with feta, avocado slices, and fresh herbs.

Notes
