- ½ cup honey or maple syrup

- 1 cup diced apples (preferably tart varieties like Granny Smith)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Optional: chopped nuts (like walnuts), raisins, or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the rolled oats, baking powder, baking soda, cinnamon, and salt in a bowl.
- Mix the applesauce, almond milk, honey (or maple syrup), and eggs until smooth in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the diced apples and any optional nuts or dried fruits.
- Line a muffin tin with liners or lightly grease it, and spoon the batter into each cup, filling them about three-quarters full.
- Bake for about 20 to 25 minutes until the tops are golden brown and a toothpick comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
For healthier alternatives, consider using a sugar substitute for sweetness or whole-grain flour instead of oats. Pair with almond butter for added protein.
