Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup soy sauce (or tamari for gluten-free)
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)
  • Pineapple slices (fresh or canned)
  • Red pepper flakes (optional)
  • Fresh cilantro (optional)

Instructions

  1. Start by making your marinade. In a medium bowl, combine the soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Whisk everything together until the sugar dissolves and the mixture is smooth.
  2. Place the chicken thighs or breasts in a large resealable bag or a shallow dish. Pour half of the marinade over the chicken, making sure each piece is well-coated. Reserve the other half of the marinade for later. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.
  3. Preheat your grill or grill pan over medium-high heat. If you don’t have a grill, a skillet will work too! Remove the chicken from the marinade and allow the excess to drip off. Discard the marinade used for marinating.
  4. Grill the chicken for about 6-8 minutes on each side, or until it reaches an internal temperature of 165°F (75°C). Baste the chicken with the reserved marinade during the last few minutes of cooking to add flavors and keep it moist.
  5. Once the chicken is cooked through, remove it from the grill and let it rest for 5 minutes. This resting period allows the juices to redistribute, ensuring tender meat.
  6. Slice the chicken against the grain and serve it over rice, garnished with sliced green onions, sesame seeds, and pineapple slices for that authentic Hawaiian touch.

Notes

Marinate the chicken for a day in advance for richer flavors. Serve over jasmine rice with lime juice for an extra twist.
