Description

Hearty and delicious Ground Beef Enchiladas filled with seasoned ground beef, gooey cheese, and vibrant spices, topped with flavorful sauce.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) chopped green chilies
  • 1 packet taco seasoning
  • 8 (6-inch) corn tortillas
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • Olive oil for cooking
  • Fresh cilantro for garnishing (optional)
  • Sour cream for serving (optional)

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  2. Cook the ground beef until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat from the skillet.
  3. Stir in the diced tomatoes, green chilies, and taco seasoning. Simmer for a few minutes to meld flavors.
  4. Preheat your oven to 350°F (175°C). Warm the tortillas in the microwave for about 20 seconds if stiff.
  5. Spread a thin layer of enchilada sauce in a 9×13-inch baking dish. Fill a tortilla with the beef mixture and cheese, roll tightly, and place seam-side down in the dish. Repeat for all tortillas.
  6. Pour remaining enchilada sauce over the top and add remaining cheese.
  7. Bake for 20-25 minutes until cheese is bubbly and golden.
  8. Garnish with chopped cilantro and serve warm with sour cream.

Notes

For healthier options, use ground turkey or vegan cheese, and substitute with gluten-free tortillas if needed. Store leftovers in the fridge for up to 3 days, or freeze assembled but unbaked for up to 3 months.
