- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon freshly grated ginger
- 3 cloves garlic, minced
- 1 teaspoon red curry paste
- 8–10 wooden or metal skewers
- Fresh cilantro, chopped (optional garnish)
- Lime wedges (optional garnish)
- Chili flakes (optional garnish)
Instructions
- Cut the chicken into 1-inch cubes.
- Combine the coconut milk, soy sauce, brown sugar, fish sauce, ginger, garlic, and red curry paste in a bowl. Whisk until blended.
- Add the chicken pieces to the marinade, ensuring they’re coated. Cover and let marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Thread the marinated chicken onto the soaked skewers, leaving space between each piece.
- Grill the skewers for about 6-8 minutes per side, until cooked through and charred.
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve hot with cilantro, lime wedges, and chili flakes as desired.
Notes
For vegetarian options, swap chicken for firm tofu or vegetables. Ensure adequate marination time for maximum flavor.
