Description

Juicy grilled chicken topped with fresh avocado, melty cheese, and a quick tomato mixture, perfect for a fast yet impressive meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 1 cup shredded cheese (Monterey Jack, pepper jack, cheddar, or a blend)
  • 1 cup cherry or Roma tomatoes
  • 1/4 cup red onion (optional)
  • 1 lime
  • 2 tbsp olive oil
  • 2 cloves garlic (or garlic powder)
  • Salt and black pepper to taste
  • 1 tsp paprika or chili powder (optional)
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Get the chicken ready by patting dry and rubbing with olive oil, salt, pepper, and garlic. Add paprika or chili powder if desired.
  2. Preheat the grill or grill pan to medium to medium-high.
  3. Grill the chicken until cooked through, about 5 to 7 minutes per side.
  4. Make the topping by chopping tomatoes and red onion; toss with salt and lime juice, adding cilantro if desired.
  5. Add cheese on top of the chicken when almost done; cover to melt for 1 to 2 minutes.
  6. Layer avocado slices on top of the melted cheese and spoon the tomato topping over it.
  7. Serve immediately for best taste.

Notes

Make sure to dry the chicken before grilling for better browning. Adjust avocado ripeness for best texture and flavor.
