Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • Salt and pepper to taste
  • 4 large russet potatoes, cut into fries
  • 2 tablespoons olive oil
  • Salt to taste
  • Optional: paprika or garlic powder for seasoning
  • Pita bread, for serving
  • Sliced olives or feta cheese, for garnish

Instructions

  1. Start by preparing the marinade for the chicken. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika. Whisk these together until well blended.
  2. Place the chicken thighs or breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover, and let it marinate in the fridge for at least 20 minutes, or even up to overnight if you plan ahead.
  3. While the chicken marinates, whip up the tzatziki sauce. In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper. Mix until everything is well integrated, then taste and adjust the seasoning as desired. Set it aside in the fridge to chill.
  4. Preheat your oven to 425°F (220°C). Spread the cut fries in a single layer on a baking sheet. Drizzle them with olive oil and sprinkle with salt. Toss them to coat thoroughly. Bake for 25-30 minutes, flipping them halfway through, until they’re golden and crispy.
  5. Heat a skillet over medium-high heat. Remove the chicken from the marinade and cook in the skillet for about 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
  6. Once cooked, move the chicken to a cutting board and let it rest for a few minutes before slicing it into strips.
  7. Assemble the dish! On a plate, lay down your crispy fries, top with sliced chicken, and drizzle a generous amount of tzatziki sauce over the chicken. Garnish with sliced olives or crumbled feta cheese if desired.

Notes

Consider making the tzatziki sauce ahead of time to save on dinner prep.
