  • 1 pound boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • 2 cups cooked rice (white, brown, or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup bell peppers, thinly sliced (any color)
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by preparing the marinade. In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk these ingredients together until fully blended.
  2. Take the chicken and place it in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 30 minutes.
  3. Heat a grill pan or skillet over medium-high heat. Once hot, remove the chicken from the marinade (throw out any leftover marinade) and cook the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  4. While the chicken is cooking, prepare your rice or quinoa according to the package instructions.
  5. Once the chicken is sliced and your grain base is ready, it’s time to assemble your bowls. Start by laying a generous scoop of rice at the bottom of each bowl.
  6. Layer on the cherry tomatoes, diced cucumbers, red onion, bell peppers, and olives. Add the sliced chicken on top and sprinkle with crumbled feta cheese.
  7. Finish off your Greek Chicken Bowls with a sprinkle of fresh parsley and any additional toppings like tzatziki or hummus. Serve immediately and savor the burst of flavors.

Notes
