- 1 lb ground turkey
- 12 oz pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced (red or yellow)
- 1 zucchini, sliced
- 1 can (14 oz) diced tomatoes (with juice)
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions
- Start by boiling water in a large pot. Add a pinch of salt, then throw in the pasta. Cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for around 3-4 minutes.
- Next, toss in the minced garlic and diced bell pepper. Cook for an additional 2-3 minutes.
- Now, add the ground turkey to the skillet. Stir it frequently, breaking it apart with a wooden spoon.
- Once the turkey is ready, stir in the zucchini, canned diced tomatoes, and tomato paste. Sprinkle in the Italian seasoning, and season with salt and pepper.
- When your pasta is cooked, drain it and add it to the skillet with the turkey mixture. Toss everything together.
- Finally, garnish your dish with fresh basil leaves and grated Parmesan cheese if desired.
Notes
Consider using whole wheat or gluten-free pasta for a healthier option.
