- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 6–8 tablespoons ice water
- 6–8 medium-sized apples, such as Granny Smith or Honeycrisp, peeled, cored, and sliced

- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 2 tablespoons lemon juice
- 2 tablespoons all-purpose flour
- 1 tablespoon unsalted butter, cubed, for dotting
- 1 egg (for egg wash, optional)
- Whipped cream or vanilla ice cream for serving
Instructions
- Start by making the pie crust. In a large bowl, mix the flour and salt. Add the cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Shape it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- While your dough chills, prepare the filling. In a large bowl, combine the sliced apples, sugar, cinnamon, nutmeg, lemon juice, and flour. Mix gently to ensure the apples are lightly coated with the sugars and spices. Set aside to allow the flavors to meld.
- Preheat your oven to 375°F (190°C). Roll out half of the chilled dough on a floured surface into a circle to fit your pie dish, about 12 inches in diameter. Place the crust in the pie dish and trim the edges, leaving a little overhang.
- Pour the apple filling into the crust, spreading it evenly. Dot the top with small cubes of butter for extra richness.
- Roll out the second half of the dough and place it over the filling. You can either cut slits for a lattice effect or simply cover it. Trim any excess dough and crimp the edges to seal. Optional: For a golden sheen, brush the top with an egg wash made of beaten egg mixed with a tablespoon of water.
- Bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Let it cool on a wire rack for at least an hour before slicing.

Allow the pie to cool completely before slicing to avoid a messy presentation. Can be served with whipped cream or vanilla ice cream for a delightful treat.
