  • 1 lb large shrimp, peeled and deveined
  • 4 cups fresh spinach
  • 4 garlic cloves, minced
  • ½ cup cherry tomatoes, halved
  • 1 tsp red pepper flakes (optional)
  • ¼ cup olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by cooking your pasta according to package instructions in a large pot of salted boiling water.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about a minute until fragrant.
  4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes.
  5. Cook them for about 2-3 minutes on each side until they turn pink.
  6. Toss in the cherry tomatoes and spinach, stirring until the spinach wilts down.
  7. Add the cooked pasta to the skillet, tossing well with the shrimp, vegetables, and oil.
  8. Squeeze the juice of one lemon and add the cheese, tossing everything together.
  9. Garnish with freshly chopped parsley before serving.

Notes

Consider swapping shrimp for chickpeas for a vegetarian option. For gluten-free, use gluten-free pasta.
