- 4 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 8 cups beef broth (or vegetable broth for a vegetarian option)
- 1 cup dry sherry or sparkling grape juice
- 1 teaspoon sugar
- 1 bay leaf
- 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 8 slices French baguette (or any crusty bread)
- 2 cups shredded Gruyère cheese
Instructions
- Start by melting the butter with olive oil in a large pot over medium heat.
- Once the butter has melted, add the thinly sliced onions.
- Stir occasionally to coat them in the buttery mixture and cook slowly.
- After about 15-20 minutes, the onions will begin to soften and turn golden. Add the minced garlic.
- Deglaze the pan by pouring in your dry sherry or sparkling grape juice.
- Add your broth, bay leaf, thyme, salt, and pepper. Bring to a boil and then reduce heat.
- While the soup simmers, preheat your oven to 350°F (175°C). Toast the slices of bread on a baking sheet.
- After simmering, remove the bay leaf and thyme sprigs from the soup.
- To serve, ladle the soup into oven-safe bowls, top with toasted bread and shredded cheese.
- Broil in the oven for 3-5 minutes until the cheese is bubbling and golden brown.
Notes
For a vegan version, use vegetable broth and omit the cheese or use vegan cheese alternatives.
