Description
A warm, savory, and rich French onion soup with deep onion flavor, topped with bubbling melted cheese.
Ingredients
Scale
- 5 to 6 large Yellow onions, sliced
- 3 tablespoons Butter
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 to 2 cloves Garlic, minced (optional)
- 1 tablespoon Flour
- 1/2 cup Dry white wine
- 6 cups Beef broth
- 1 teaspoon Thyme (fresh or dried)
- 1 Bay leaf
- 1/2 teaspoon Black pepper
- Baguette or sturdy bread slices
- 2 cups Gruyere cheese, grated
Instructions
- Slice your onions thinly. In a big pot, melt butter with olive oil over medium heat. Add onions and salt. Cook, stirring often, until they start to shrink and release liquid.
- Continue cooking and stirring every few minutes until onions are deep golden brown, jammy, and sweet, about 35 to 55 minutes.
- Add garlic (if using) and stir for about 30 seconds. Sprinkle in flour and stir for 1 minute.
- Pour in the wine and scrape the bottom of the pot. Let it simmer for a few minutes.
- Add broth, thyme, and bay leaf. Bring to a gentle simmer, then lower heat and let cook for 20 to 30 minutes. Taste and adjust salt and pepper.
- Toast the bread slices until crisp. Ladle soup into oven-safe bowls, add toasted bread on top, then pile on grated Gruyere.
- Broil until cheese is melted and browned, watching closely to avoid burning.
Notes
For best flavor, cook onions patiently and use high-quality broth. Make ahead for even better taste.
