- 4 large eggs
- 2 tablespoons butter
- 2 tablespoons milk or half and half
- 1/4 teaspoon salt
- Black pepper, to taste
- Chives or shredded cheese (optional)
Instructions
- Crack the eggs into a bowl. Add the milk and salt. Whisk until blended and foamy.
- Warm the pan over low to medium-low heat and melt the butter slowly.
- Add the egg mixture to the pan. Wait 10 seconds, then start moving them with a spatula.
- Turn off the heat when the eggs are mostly set but still slightly wet on top.
- Finish and serve immediately, adding pepper and any extras like chives.
Notes
For the fluffiest results, cook on low heat and take the eggs off the heat just before they are fully done.
