  • 1 cup fresh spinach, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • Optional toppings: everything seasoning, sesame seeds, poppy seeds, shredded cheese, flaky salt

Instructions

  1. Heat the oven to 425°F (220°C).
  2. Prep the spinach by chopping it small or thawing and squeezing dry if using frozen.
  3. Mix cottage cheese, egg, and spinach in a bowl.
  4. Add flour, baking powder, and salt; mix into a soft dough.
  5. Shape the dough into 4 flat bagels, pressing them into thick disks.
  6. Add toppings if desired, brushing with egg or water first.
  7. Bake for 18 to 22 minutes until golden, then cool for 5 minutes before slicing.
