Ingredients

- 2 pounds of beef chuck, cut into 1-inch cubes
- 4 cups of beef broth (homemade or store-bought)
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 teaspoon of dried thyme
- 1 teaspoon of rosemary
- 1 bay leaf
- Salt and pepper to taste
- Optional: 1 cup of additional vegetables (like peas or green beans)
- Optional: A splash of apple cider for a hint of sweetness
Instructions
- Begin by seasoning the beef cubes with salt and pepper.
- In a large skillet over medium-high heat, sear the seasoned beef cubes until they’re browned on all sides.
- Transfer the seared beef to the crockpot.
- In the same skillet, add oil if needed and sauté the onions and garlic until translucent.
- Transfer the sautéed onions and garlic to the crockpot.
- Add the diced potatoes, sliced carrots, tomato paste, beef broth, thyme, rosemary, and bay leaf into the crockpot.
- Give everything a nice stir to combine.
- For added flavor, drizzle a splash of apple cider if desired.
- Place the lid on the crockpot and set it to cook on low for 8 hours or high for 4 hours.
- When cooking time is up, remove the bay leaf and adjust seasoning if necessary.
- Serve hot and enjoy!
Notes
Consider substituting beef for chicken or turkey and using low-sodium broth for a healthier option. Avoid overcrowding the crockpot for the best results.
