Instructions
- Preheat your oven to 400°F (200°C).
- Toss baby potatoes with olive oil, salt, and black pepper in a mixing bowl.
- Spread the potatoes on a baking sheet and roast for 15 minutes.
- Season the chicken breasts with salt, pepper, and thyme, then sear in a skillet for 4-5 minutes per side.
- Remove chicken and sauté minced garlic in the same skillet for 30 seconds.
- Add heavy cream and Dijon mustard to the skillet, simmering for 2-3 minutes.
- Return the chicken to the pan, coating it in the sauce and simmer together for 5 minutes.
- Add roasted potatoes to the skillet with chicken and sauce, gently stirring to combine.
- Let the dish cook together for an additional 10 minutes.
- Garnish with freshly chopped parsley and serve hot.
