Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup black raspberry jam or preserves
  • 1 cup black raspberries, fresh or frozen (if frozen, do not thaw)
  • Optional: 1/2 cup white chocolate chips or a simple sugar glaze

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the softened butter, brown sugar, and granulated sugar until creamy.
  3. Add the egg and vanilla, mixing until smooth and fluffy.
  4. Sprinkle in the flour, baking soda, and salt; mix until there are no dry flour streaks.
  5. Stir in the black raspberry jam gently and fold in the black raspberries.
  6. Scoop dough onto the baking sheet, about 1.5 tablespoons each, giving space between them.
  7. Bake for 9 to 11 minutes, until the edges are set but centers look soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a rack or plate.

Notes

These cookies are best enjoyed when slightly warm. They can be frozen for later cravings.
