- 1 tablespoon olive oil (or any cooking oil)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, rinsed and drained (or kidney beans)
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (like cheddar or pepper jack)
- 1 tablespoon taco seasoning (or your favorite spices)
- 4 large flour tortillas
- Salsa or pico de gallo (optional for serving)
- Sour cream (optional for serving)
- Fresh cilantro, chopped (optional for garnish)
- Lime wedges (for serving)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 2-3 minutes until it softens.
- Toss in the minced garlic and cook for an additional minute.
- Add the ground beef or turkey, cooking until browned and cooked through (about 5-7 minutes).
- Drain any excess fat, then sprinkle taco seasoning over the meat and stir well.
- Mix in the drained black beans and corn, cooking for another 3-4 minutes until heated through.
- Place a tortilla on a clean surface and add a scoop of the beef mixture down the center, followed by cheese.
- Fold the sides of the tortilla over the filling and roll tightly from the bottom up.
- Repeat with the remaining tortillas and filling. Optionally toast in a pan for 2-3 minutes on each side.
Notes
For healthier alternatives, use whole-wheat tortillas, extra-lean meat, or substitute with beans and veggies for a vegetarian option.
