- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 1 cup chicken broth
- 8–10 corn tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Sour cream, optional
- Shredded cheese, optional
- Sliced jalapeños, optional
- Diced tomatoes or salsa, optional
- Guacamole, optional
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Toss in the chicken breasts and sprinkle with cumin, chili powder, paprika, salt, and black pepper. Sear for 2-3 minutes on each side.
- Pour in the chicken broth, cover the skillet, and reduce heat to low. Let simmer for about 20 minutes.
- Remove the chicken and shred using two forks.
- Return the shredded chicken to the skillet, stir it into the broth, and warm the corn tortillas in another skillet.
- Assemble the tacos with shredded chicken and your favorite toppings. Serve with lime wedges.
Notes
For healthier alternatives, try jackfruit instead of chicken or Greek yogurt instead of sour cream.
