Description

Delicious and nutritious Pumpkin Protein Balls that are easy to make and perfect for a healthy snack.


Ingredients

  • 1 cup rolled oats
  • ½ cup canned pumpkin puree
  • ¼ cup honey or maple syrup
  • ½ cup nut butter (peanut, almond, or cashew)
  • ½ cup vanilla protein powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • Optional: ½ cup chocolate chips or dried fruit

Instructions

  1. Combine the rolled oats, protein powder, cinnamon, nutmeg, and a pinch of salt in a large mixing bowl.
  2. Add the canned pumpkin puree, honey (or maple syrup), and nut butter. Mix until fully combined.
  3. If using chocolate chips or dried fruit, fold them into the mixture carefully.
  4. Roll the mixture into small balls, about the size of a tablespoon.
  5. Place the formed balls onto a parchment-lined baking sheet or plate, then cover and chill in the refrigerator for about 30 minutes.

Notes

These protein balls can be stored in an airtight container in the fridge for up to a week, or in the freezer for up to three months.
