Description

A classic homemade apple pie with a flaky crust and a sweet, spiced apple filling, perfect for any occasion.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples (a mix of Granny Smith and Honeycrisp)
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg (optional)
  • 1 tablespoon unsalted butter, to dot
  • 1 egg, beaten (for egg wash – optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Start by preparing your pie crust. In a large mixing bowl, combine the flour, salt, and sugar. Add the chilled, diced butter. With a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Don’t overwork it!
  2. Once your dough is formed, divide it into two equal parts. Flatten each part into disks, wrap them in plastic wrap, and refrigerate for at least 1 hour.
  3. While the dough is chilling, prepare the apple filling. Peel, core, and slice the apples into thin wedges. In a large bowl, toss the apple slices with the lemon juice, sugar, flour, cinnamon, and nutmeg, if using. Let this sit for about 15 minutes.
  4. Preheat your oven to 425°F (220°C). Take one disk of dough out of the refrigerator and roll it out on a floured surface into a circle about 12 inches in diameter. Carefully transfer the rolled dough to a 9-inch pie pan.
  5. Pour the apple mixture into the prepared pie crust, making sure to pile it high. Dot the top of the filling with small pieces of butter.
  6. Roll out the second disk of dough the same way, and place it over the apples. Cut slits in the top crust for steam to escape. Trim any excess dough and crimp the edges to seal.
  7. Brush the top with the beaten egg for a golden finish, if desired.
  8. Bake your pie in the preheated oven for about 45 to 60 minutes, or until the apples are tender and the crust is golden brown.
  9. Allow the pie to cool for at least 2 hours before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra touch of sweetness.
