- 4 medium sweet potatoes, peeled and diced
- 1/2 cup brown sugar (or coconut sugar)
- 1/2 cup milk (or almond milk)
- 1/4 cup unsalted butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup mini marshmallows (or chopped pecans)
- Optional: 1/4 cup maple syrup
Instructions
- Start by preparing your sweet potatoes. Peel them and cut them into small, even pieces.
- In a large bowl, combine the diced sweet potatoes with brown sugar, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Stir until well combined.
- Grease the crockpot with cooking spray or butter. Pour the sweet potato mixture into the crockpot, spreading it evenly.
- Set your crockpot to low for 4-6 hours or high for 2-3 hours. Optionally stir halfway through.
- When the sweet potatoes are soft, about 15 minutes before serving, sprinkle mini marshmallows over the top.
- Cover and cook on high for an additional 15 minutes or until the marshmallows are melted and slightly toasted.
Notes
Serve with roasted Brussels sprouts or green beans to balance the meal. For beverages, warm spiced apple cider complements the sweetness well.
