  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk (or plain yogurt)
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs (panko for extra crispiness)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • ½ cup mayonnaise
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Pickles

Instructions

  1. Begin by marinating the chicken. In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts and ensure they’re fully coated. Cover and refrigerate for at least 30 minutes.
  2. After marinating, prepare your breading station. Set up three bowls: one with flour seasoned with salt and pepper, another with the beaten eggs, and the last with breadcrumbs mixed with additional spices.
  3. Take a chicken breast from the marinade, dredge it in flour, dip it into the beaten eggs, and coat it in breadcrumbs until fully covered.
  4. In a large skillet, heat about an inch of vegetable oil over medium-high heat. Carefully place the breaded chicken in the skillet in batches.
  5. Cook the chicken for about 5-7 minutes per side until golden brown and the internal temperature reaches 165°F.
  6. While the chicken rests, whip up your dill sauce by combining mayonnaise, fresh dill, lemon juice, Dijon mustard, and a sprinkle of salt and pepper in a bowl.
  7. Assemble the sandwiches with a piece of crispy chicken, drizzle with dill sauce, and top with lettuce, tomato, and pickles.

Notes

For a healthier take, use Greek yogurt instead of mayonnaise. To make a vegan version, substitute chicken with chickpea patties and use vegan mayo.
