- 2 cups of diced carrots
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 4 cups of vegetable broth
- 1 cup of cream (or a dairy-free alternative)
- Salt and black pepper to taste
- Optional: a pinch of paprika or thyme for extra flavor
Instructions
- Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Next, add the diced carrots to the pot. Sauté for 5 minutes, allowing them to soften slightly before adding the peas.
- Pour the vegetable broth into the pot. Bring it to a gentle boil, then reduce the heat and let it simmer for about 10 minutes.
- Once the vegetables are tender, use an immersion blender to puree the soup to your desired consistency.
- After blending, return the soup to the pot over low heat, and stir in the cream. Allow it to heat for a few minutes.
- Serve hot! You can add a drizzle of olive oil or a sprinkle of fresh herbs on top for that finishing touch.
Notes
For a lighter version, consider using almond milk instead of cream, or add leafy greens for extra nutrition.
