- 12 oz fettuccine or your preferred pasta
- 2 cups mushrooms (button, shiitake, or cremini), sliced
- 1 cup heavy cream or a plant-based alternative
- 1 cup vegetable broth
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
- Grated Parmesan cheese or a vegan cheese alternative for serving
Instructions
- Start by cooking your pasta according to package instructions. In a large pot of salted boiling water, cook the fettuccine until it’s al dente, about 8 to 10 minutes. Once ready, drain the pasta, reserving about a cup of the starchy pasta water.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Once hot, add the diced onion and sauté until it becomes translucent, about 3-4 minutes. Then, stir in the minced garlic and red pepper flakes, letting the mixture simmer for another minute.
- Throw in the sliced mushrooms next. Sauté them until they’re browned and tender, which should take around 5-7 minutes.
- After the mushrooms are perfectly sautéed, pour in the vegetable broth and bring it to a gentle simmer, letting it reduce slightly for about 2-3 minutes.
- Now, add the heavy cream and mix it well, letting the sauce bubble gently. Adjust the heat to low and season with Italian seasoning, salt, and pepper to taste. If the sauce appears too thick, gradually add the reserved pasta water until you reach your desired consistency.
- Finally, toss in the prepared fettuccine and mix until the pasta is beautifully coated by the cream sauce.
- Serve hot, garnishing with fresh herbs and a generous sprinkle of Parmesan cheese or vegan cheese.
Notes
For healthier alternatives, try switching to whole wheat or gluten-free pasta, or opt for coconut cream instead of heavy cream.
