A cozy, one-pan chicken dinner featuring a creamy garlic parmesan sauce, sun dried tomatoes, and fresh spinach.

- 4 Boneless skinless chicken breasts or thighs
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 4 cloves Garlic, minced
- 1/2 cup Sun dried tomatoes, sliced
- 1 cup Chicken broth
- 1 cup Heavy cream
- 1/2 cup Parmesan, freshly grated
- 3 cups Fresh baby spinach
- Optional: Red pepper flakes for heat
Instructions
- Prep and season the chicken by patting it dry and seasoning both sides with salt, pepper, and Italian seasoning.
- Brown the chicken in olive oil over medium-high heat until golden, then move to a plate.
- Build the sauce by reducing heat, adding butter and garlic, cooking until fragrant. Add sun dried tomatoes and chicken broth, scraping the pan to release browned bits.
- Stir in heavy cream and bring to a simmer, then add parmesan until melted and the sauce is smooth.
- Add spinach and stir until wilted, then return chicken to the pan, spoon sauce over, and simmer until chicken is cooked through.
Notes
For a silkier sauce, use freshly grated parmesan. Optionally serve with pasta, mashed potatoes, or crusty bread.
