Ingredients

  • 1/2 cup water
  • 1 cup finely chopped vegetables (carrots, spinach, or mushrooms)
  • 1/2 cup cooked chicken or tofu (optional)
  • 4 cups chicken or vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce or coconut aminos
  • 1 tablespoon fresh lime juice
  • 1 tablespoon sugar (brown or coconut sugar)
  • Fresh cilantro or basil for garnish
  • Sliced green onions for garnish
  • Lime wedges for garnish
  • Chili flakes or sliced chilies (optional)

Instructions

  1. Start by preparing the dumplings. In a bowl, mix the flour and salt, then gradually add water, stirring until a dough forms. Knead it for about 5 minutes until smooth.
  2. Once your dough is ready, roll it out onto a floured surface. Cut out circles using a cookie cutter or a glass, about 2-3 inches in diameter. Place a small spoonful of your chosen filling in the center of each circle. Fold the dough over and pinch the edges to seal tightly.
  3. Bring a pot of water to a boil. Carefully drop the dumplings into the water and let them cook until they float to the surface, approximately 3-5 minutes.
  4. In a separate large pot, combine the broth, coconut milk, and red curry paste. Stir well, bringing the mixture to a gentle simmer.
  5. Add the soy sauce, lime juice, and sugar to the broth. Taste and adjust seasoning as necessary.
  6. Carefully add the cooked dumplings to the soup. Allow them to warm through in the broth for about 5 minutes.
  7. Serve hot in bowls garnished with fresh herbs, green onions, and lime wedges.

Notes

Feel free to customize the ingredients based on your taste preferences or dietary needs. This soup can be made vegetarian or vegan by using vegetable broth and tofu.
