- 8 oz. of penne or rotini pasta
- 1 lb. of sirloin steak, thinly sliced
- 2 tablespoons of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of shredded cheddar cheese
- ½ cup of buffalo sauce (adjust to taste)
- Salt and pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Start by cooking the pasta according to the package instructions. Ensure you add enough salt to the boiling water; this will enhance the flavor of the pasta itself. Aim for an al dente texture since the pasta will continue to cook a bit later. Once done, drain and set it aside, saving a bit of the pasta water.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the slices of sirloin steak, seasoning them with salt and pepper. Sear the steak for about 3-4 minutes, stirring occasionally, until it’s browned and cooked through. Remove the steak from the skillet and set it aside, keeping it warm.
- In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic, cooking for an additional minute until fragrant. This combination builds a fantastic base for your creamy sauce.
- Pour in the heavy cream, heating it gently while stirring to combine. Next, slowly add the shredded cheddar cheese, continuously mixing until it melts and forms a luscious sauce. Now’s the time to pour in the buffalo sauce, and you can adjust the amount based on your preferred heat level.
- Return the steak to the skillet, mixing it into the sauce until it’s well coated. If the sauce seems too thick, add a small splash of the reserved pasta water to reach your desired consistency. Finally, fold in the cooked pasta, ensuring every piece is generously covered in that creamy, tangy goodness.
- Allow the dish to simmer for a couple of minutes to ensure everything is heated through and well combined. Don’t forget to taste and adjust the seasoning as necessary!
Notes
For a lighter version, use half-and-half instead of heavy cream. You can substitute steak with chicken breast, turkey, or add more veggies like spinach for extra flavor.
