- 4 chicken thighs (boneless and skinless)
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Optional: Add vegetables like peas or carrots
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper, then add to the skillet. Sear for about 5-7 minutes on each side.
- Remove chicken from the skillet and set aside. In the same skillet, add chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and stir for an additional minute.
- Stir in the long grain rice, ensuring it’s well-coated with oil. Add chicken broth and return chicken to the skillet, placing it on top of the rice.
- Bring the mixture to a light boil. Once bubbling, reduce heat to a simmer, cover, and cook for about 20 minutes.
- Remove the lid and stir in heavy cream and Italian seasoning. Allow to simmer for an additional 5 minutes uncovered.
- Taste and adjust seasoning as needed. Serve topped with fresh parsley if desired.

Feel free to substitute ingredients to suit dietary preferences, such as using brown rice or coconut milk.
