Ingredients

  • 1 pound of sirloin steak, cut into bite-sized pieces
  • 8 ounces of pasta (such as fettuccine or linguine)
  • 4 tablespoons of unsalted butter
  • 4 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by cooking the pasta according to the package instructions. Bring a large pot of salted water to a boil, add the pasta, and stir occasionally. You’ll want it al dente, so keep an eye on the clock. Typically, this should take about 8-10 minutes. Once done, drain and set aside, retaining about a cup of the pasta water to help adjust your sauce later if needed.
  2. While the pasta cooks, heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once melted, toss in the steak bites in a single layer. Sear them for about 3-4 minutes on each side until they’re beautifully browned and cooked to your preference. Season with salt and pepper during the cooking process. Once done, remove the steak from the skillet and set it aside, keeping that pan drizzled with flavor.
  3. In the same skillet, lower the heat slightly and add the remaining 2 tablespoons of butter. As it melts, add the minced garlic and sauté for about 30 seconds until fragrant—don’t let it brown too much, or it may become bitter.
  4. Pour in the heavy cream, stirring gently to combine. Let it simmer for a couple of minutes until it thickens a bit. Gradually whisk in the Parmesan cheese, allowing it to melt and create a deliciously creamy sauce. If the sauce thickens too much, adjust the consistency by adding some of the reserved pasta water.
  5. Toss the cooked pasta in with the creamy sauce, ensuring every strand is generously coated. Add the seared steak bites back into the skillet and gently mix everything together. At this stage, adjust the seasoning with additional salt and pepper if necessary.
  6. Remove from heat and garnish with fresh chopped parsley. Serve immediately, savoring the delightful mixture of flavors that dance on your palate.

Notes

Swap sirloin for chicken or use whole grain pasta for healthier alternatives.
