A cozy and impressive creamy chicken dish made with Boursin cheese, garlic, and herbs, all prepared in a single skillet.

- 2 large boneless skinless chicken breasts (or 4 small cutlets)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 to 3 cloves garlic, minced
- 3/4 cup chicken broth
- 1/2 cup heavy cream
- 1 package (5.2 ounces) Boursin cheese
- Optional: a handful of spinach, sautéed mushrooms, or a squeeze of lemon
Instructions
- Prep the chicken by cutting it into even cutlets or pounding it to an even thickness, then season with salt and pepper.
- Heat olive oil in a large skillet over medium high heat and brown the chicken for 4 to 6 minutes per side, then move to a plate.
- Add butter and garlic to the same skillet, stirring for 20 to 30 seconds until fragrant. Pour in chicken broth, scraping any browned bits from the bottom.
- Mix in heavy cream and then add Boursin cheese, stirring until it melts into a smooth sauce.
- Return the chicken to the skillet, spooning sauce over top. Let simmer for 3 to 5 minutes until chicken is cooked through and sauce thickens. Add spinach at the end if desired.
