- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces mushrooms, sliced (cremini or button)
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Optional: 1 teaspoon dried thyme or oregano for extra flavor
Instructions
- Heat the olive oil and butter in a large skillet over medium-high heat. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes.
- Toss in the minced garlic, stirring for around 30 seconds, then add the sliced mushrooms and season with salt and pepper. Cook until tender, about 5-7 minutes.
- Incorporate the chicken pieces, seasoning generously with salt and pepper. Stir and cook until browned, about 5-7 minutes.
- Pour in the chicken broth, scraping bits from the bottom of the skillet. Simmer for about 5 minutes to reduce.
- Lower the heat and stir in the heavy cream. Let it bubble gently for about 5-10 minutes until thickened.
- Add dried herbs if using, stir to combine, and adjust seasonings.
- Garnish with fresh parsley before serving.
Notes
For a lighter version, use Greek yogurt mixed with water instead of heavy cream. For gluten-free, ensure the chicken broth is gluten-free.
