Ingredients

  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • A pinch of salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Apple slices and cinnamon for garnish (optional)

Instructions

  1. Start by preheating your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter until it resembles wet sand.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust in the preheated oven for about 10 minutes and then let it cool.
  5. In another large bowl, beat the softened cream cheese with granulated sugar until smooth.
  6. Add the apple cider, vanilla extract, cinnamon, nutmeg, and salt, mixing until well combined.
  7. Gently add the eggs one at a time, mixing on low speed until just incorporated.
  8. Pour the creamy mixture on top of the cooled crust in the springform pan.
  9. Bake for about 50 minutes, or until the center is set but slightly jiggles when shaken gently.
  10. Let it cool at room temperature for an hour.
  11. Refrigerate for at least 4 hours—preferably overnight.
  12. Whip the heavy cream with powdered sugar until you reach stiff peaks and spread over the chilled cheesecake.
  13. Garnish with fresh apple slices and a sprinkle of cinnamon if desired.

Notes

For a vegan version, swap out the cream cheese for a dairy-free alternative and eggs for a flaxseed mixture. Consider using almond flour for a low-carb crust.
