Description
A creamy, sweet side dish made with fresh corn that evokes memories of home-cooked meals.
Ingredients
Scale
- 4 cups fresh corn kernels (about 6–8 ears of corn), or 2 (15 oz) cans of corn
- 1 cup heavy cream (or whole milk for a lighter version)
- 4 tablespoons unsalted butter
- 1 tablespoon sugar (adjust according to the sweetness of the corn)
- Salt and pepper to taste
- 1/4 cup finely chopped onion (optional)
- 1 tablespoon all-purpose flour (optional)
- Fresh herbs like thyme or parsley for garnish
Instructions
- Start by shucking the corn and removing the kernels from the cob.
- In a large skillet, melt the butter over medium heat.
- Add the chopped onions (if using) and sauté until translucent, about 3-4 minutes.
- Once the onions are ready, stir in the corn kernels and sugar, cooking for another 5 minutes.
- Gradually pour in the heavy cream while stirring, bring to a gentle simmer.
- Season the corn with salt and pepper, allowing it to simmer and reduce for about 5-7 minutes.
- Remove from heat and garnish with fresh herbs before serving hot.
Notes
For a dairy-free version, use coconut or almond milk instead of cream. Keep an eye on the cooking time to avoid mushy kernels.
