Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Fold in the chopped cranberries and orange zest gently.
- Whisk the egg in a separate bowl until lightly beaten, then add the orange juice, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the nuts if using.
- Transfer the batter to the prepared loaf pan, smoothing the top.
- Bake for about 55 to 60 minutes, or until a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack.
