  • 2 cups fresh or frozen cranberries (about 8 ounces)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 tablespoon cornstarch
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place your pie crust in a 9-inch pie plate and crimp the edges.
  3. In a mixing bowl, combine cranberries, sugar, and cornstarch.
  4. In another bowl, whisk together eggs, heavy cream, vanilla extract, salt, and cinnamon.
  5. Pour the egg mixture over the cranberry mixture, stirring gently.
  6. Pour the entire mixture into the prepared pie crust.
  7. Bake for 45 to 50 minutes, until the custard is set.
  8. Let it cool slightly before slicing.

Notes
