- 1 cup fresh or frozen cranberries
- 1/2 cup cranberry juice (no added sugar if possible)
- 1/4 cup honey or maple syrup
- 2 teaspoons Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh rosemary or thyme for garnish (optional)
Instructions
- Start by preparing your chicken. Pat the chicken breasts dry with a paper towel and season both sides generously with salt and pepper.
- In a large skillet over medium heat, add the olive oil. Once hot, place the seasoned chicken breasts in the pan. Sear them for about 5-7 minutes per side.
- While the chicken is searing, you can make the cranberry sauce. In a medium saucepan, combine the cranberries, cranberry juice, honey, and Dijon mustard.
- Stir this mixture over medium heat until the cranberries begin to pop and soften, roughly 5-10 minutes.
- Once the chicken is golden brown, pour the cranberry sauce over the chicken. Reduce heat to low, cover, and let the chicken simmer in the sauce for an additional 15 minutes.
- After the chicken has cooked through, use a meat thermometer to ensure it reads at least 165°F (74°C).
- Remove the skillet from the heat and let the chicken rest for a few minutes. Garnish with fresh rosemary or thyme before serving.
Notes
Substitute turkey for a leaner option, or use agave nectar for a vegan version. Consider adding chopped onions or garlic for extra flavor.
