  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 cup cottage cheese
  • 1 cup fresh spinach (or frozen, thawed and drained)
  • 1 cup sliced mushrooms (fresh or canned)
  • 1 cup shredded cheddar cheese (or a cheese of your choice)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • Optional: 1/2 cup breadcrumbs for topping

Instructions

  1. Begin by preheating your oven to 350°F (175°C). While it preheats, you can prepare your ingredients.
  2. In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
  3. Then, add the minced garlic and sliced mushrooms, cooking until the mushrooms have released their moisture and are tender, about 5-7 minutes.
  4. Stir in the fresh spinach, followed by the dried thyme, salt, and black pepper. Cook until the spinach is wilted, which should take about 2 minutes.
  5. Once done, remove the skillet from heat and let it cool slightly.
  6. In a separate mixing bowl, combine the cottage cheese, shredded chicken, and half of the cheddar cheese.
  7. Pour in the cooled mushroom and spinach mixture, and stir everything gently until well-combined.
  8. Transfer the entire mixture into a greased baking dish, spreading it evenly. Sprinkle the remaining cheddar cheese on top.
  9. If you’re opting for breadcrumbs, now’s the time to sprinkle those evenly over the cheese layer.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown. Once it’s done, let it sit for about 5 minutes before serving.

Notes

For healthier alternatives, consider using Greek yogurt instead of cottage cheese or adding more vegetables. The casserole can be prepared ahead of time and stored in the refrigerator.
